A Gnome will have a +15 bonus to Engineering. Because of this, you could decide engineering is perfect for your Gnome. If you are Mage or Warlock, I suggest sticking with tailoring or alchemy and herbalism. Those professions are better suited to the class skills. 

Draenei gets a +5 racial bonus to Jewelcrafting. This can be a good profession to level later, after your class is at 80, and you want to level something just for fun. Pair it with mining and go grind out your own ores. This craft is expensive to level, especially if you buy all the mats on the AH.  You may want to run this craft if you are Warrior, or Paladin. The boosts you get for yourself will be great.

As a Tauren, you get a + 15 racial bonus to Herbalism. This means you can pick up the ever-elusive earth root from the beginning. You can find it in most starter areas, and its herbalism skill 15+ to harvest. You should consider Herbalism with your Tauren if you want to make money. This would be great for a Shaman to pair with Alchemy or Tailoring.
